Kenny Yakkel, who was responsible for Dead Air and 51, penned the script.
While plot details are thin on the ground, production on Glutton 3D is expected to commence in July.
Arquette will next been seen in the horror-slasher sequel Scream 4, which opens in the UK on April 15.
